Anyone can cook well in a kitchen. The work is doing it at 5am, two hours from town, for a hundred people with a schedule that cannot move. We are set up for that as seriously as we are for the food.

A calendar that is too full is the reason catering fails. We hold capacity deliberately, so that the team on your job is the team we would send to our own, and so that the owner is available to you rather than to a spreadsheet.
That makes us a poor fit for volume work and a good fit for anything where the cost of a mistake is high. If your event is one of those, we should talk early — the best outcomes come from being brought in during planning, not after the venue is booked.
